Perfect Pepperoni Pizza Dip

Good morning Foodies!

Entertaining guests can be a lot of fun, but it’s definitely a lot of work when it comes to the food. More often than not, you want to make something that is new and fresh but – at the same time – easy to make and universally appealing. One of my “go to” recipes for entertaining my family and friends is definitely this one. Honestly, I don’t like pepperoni pizza that much, but it seems that you don’t have to in order to enjoy this dip.

It’s a unique dip, at least in my mind, and I generally receive rave reviews when I serve it at parties with tortilla chips and/or bread. The consistency would perhaps be described best as creamy, and there are multiple layers to this dish.

Here is what you will need (to make 1 ½ cups):

1 8 oz. package cream cheese (softened)
1/2 cup sour cream
1 teaspoon dried oregano
1/8 teaspoon garlic powder
1/8 teaspoon crushed red pepper
1/2 cup pizza sauce
1/2 cup chopped pepperoni
1/4 cup sliced green onions
1/2 cup shredded mozzarella cheese

In a small mixer bowl, beat together cream cheese, sour cream, oregano, garlic powder, and red pepper. Spread evenly in 9” X 13” pan. Spread pizza sauce over the top. Sprinkle w/ pepperoni, green onions, and bake @ 350 F for 10 – 15 minutes.

Remove from oven, top w/ cheese, bake 5 more minutes or until cheese is melted. Serve w/ sweet pepper strips, broccoli flowerets, or crackers.

Delectable Dessert Fruit Pizza

Good morning Foodies!

Hopefully you had another enjoyable weekend! For my family, it was a busy one. Saturday we hosted a high school graduation party, and boy was it a lot of work! Thankfully, we purchased some food from a local Chipotle Mexican Grill to help ease the burden of preparing dishes. Of the dishes I prepared by hand, my fruit pizza definitely stole the show. Multiple people asked me for the recipe on Saturday, so I decided to share one of my favorite dessert recipes with all of you!

The recipe itself is simple. For the crust, you will need:

1/3 cup margarine or butter
1/3 cup shortening
2 cups flour
1 egg
¾ cup sugar
1 tablespoon milk
1 teaspoon baking powder
1 teaspoon vanilla
dash of salt

Preheat the oven to 375 F. Beat margarine and shortening with an electric mixer on medium to high speed for 30 seconds. Add about half the flour, the egg, sugar, milk, baking powder, vanilla, and salt. Beat until thoroughly combined. Beat in remaining flour. Press dough into a lightly greased, round, 12” pizza pan. Bake at 375 F For 7 to 10 minutes. Let cool.

For the topping:

1 8 oz. package cream cheese mixture
1 cup sugar

Cream the cream cheese and the sugar together until smooth and well blended. Spread the cream cheese mixture over the cookie dough crust. Top with your favorite fresh, canned, or frozen fruits. Fruits that work really well (in my opinion) include: kiwi, pineapple, mandarin oranges, strawberries, blueberries, and bananas (if you can keep them from turning brown – use bananas with a bit of green on the peel and sprinkle the slices with lemon juice to keep them from turning brown as quickly.)

The aspect of this dish that requires the most time for me is topping the “pizza” with fruit. I firmly believe that the reason I receive so many compliments on this dessert is not just because it tastes good. I consider myself an artist when preparing fruit pizza because I always create a unique radial design with the sliced fruit. Experiment with this and spend as little or as much time on the fruit as you would like, but keep in mind that the presentation of this dish can be incredible!

Houdini’s Magical Zucchini Crescent Pie

Good Morning Foodies!

I haven’t made this recipe in a long time, but it is still one of my favorites! It is perfect for entertaining extended family or friends, and I have gotten nothing but compliments on it whenever I do make it. Now, sometimes the word “zucchini” is a huge turn off for kids, but this zucchini pie recipe has been a hit with my entire family – kids included. The flavor of the zucchini is present, but the texture of the pie is almost more cheesy and creamy than anything.

The problem I often run into when I serve this dish is that I don’t make enough of it. People usually ask for a second slice – but I guess that is a good problem to have! This zucchini pie recipe is one of those “melt-in-your-mouth” dishes, and if you have not tried it – you are missing out!

Here is what you need:

4 cups thinly sliced zucchini
1 cup chopped onion
¼ – ½ cup margarine
½ cup shopped parsley (OR 2 tablespoons parsley flakes)
½ teaspoon salt
½ teaspoon pepper
¼ teaspoon garlic powder
¼ teaspoon basil
¼ teaspoon oregano leaves
2 eggs
8 oz. (2 cups) shredded mozzarella cheese
8 oz. can Pillsbury Crescent Rolls
2 teaspoon mustard

Cook and stir the zucchini and onion in the margarine for 10 minutes. Stir in the parsley (or parsley flakes), salt, pepper, garlic powder, basil, and oregano leaves. Combine 2 beaten eggs and mozzarella cheese. Stir into zucchini mixture.

Separate the crescent rolls into 8 triangles. Place them evenly into an ungreased 10” pie pan; press over the bottom and up to form the crust. Spread mustard onto the crust. Pour vegetable mixture into crust.

Bake at 375 F for 18 – 20 minutes (cover with foil during the last 10 minutes.) Let stand for 10 minutes. This recipe will make 6 servings. (You may use a 12” by 8” baking dish if you so choose).
